Date & Nut Sweet Salami

This recipe is a sweet take on traditional salami, with a rich chocolate taste and bursting with nuts. It’s great to give away wrapped up as a gift or makes an impressive after dinner treat when entertaining guests! Pistachios really make this recipe a standout, especially when sliced.

Method

  1. 1. In a food processor, add the dates and coconut oil. Pulse several times until the mixture resembles a date paste, the mixture will be sticky.

    2. Add the cacao powder, coconut, nuts and raisins. Pulse again until the texture is coarse and almost forms a ball.

    3. Next, lay a rectangle of baking paper down, place the mixture in a line across the length of the paper. Try to maintain the same thickness as you tip the mixture out.

    4. Wet your hands, and roughly shape into a log.

    5. Then, transfer to clingfilm, secure the ends and roll into a tightly rolled log shape.

    6. Finally, place the salami log into the fridge to chill overnight.

    7. The next day, place the desiccated coconut on a large plate.

    8. Next, unwrap the salami log and roll in the coconut until all sides are covered.

    9. When ready to serve, place on a chopping board and slice into round discs around 1cm thick.

Tips

To minimise food waste store nuts/seeds out of direct light and heat and always in an airtight container.
Homemade date paste or puree couldn’t be easier! Simply remove the pits from Medjool dates (or buy already pitted), add to a bowl and pour boiling water over the dates to cover. Cover and set aside overnight. The next day, drain the dates and blend in a food processor until smooth. Use in place of sugar in both sweet and savoury recipes. Dates are super nutritious and high in fibre!
