    1. Peel and chop the shallot in brunoise and brown in a saucepan with a tablespoon of olive oil.
    2. Add the curry paste and sauté.
    3. Add the walnuts and cashews and cook 5-10 minutes.
    4. Then, pour in the liquids (soy sauce, sweet chilli and coconut milk) and dissolve the curry well.
    5. Mash and keep cold. It can be served warm or cold.
    6. Wash and cut the vegetables into sticks to serve with the sauce.

Tips

You can add a little more coconut milk to the sauce and use it to cook small pieces of chicken (or tofu) and sautéed vegetables. Accompany it with rice and you will have an amazing curry.
