Mango Masala

Method

    1. Put the rice in a pot with the 3 cups of water and salt. Let it cook, in low flame, for 30 minutes until the water has evaporated, and the rice is cooked.
    2. In a wide pan, heat oil. Add mustard seeds and when they splutter, add red lentils and turmeric powder. Incorporate pine nuts, peanuts, and macadamia, and continue to sauté till it turns light golden.
    3. Then add curry leaves, and red chilies and sauté. Add grated mango, salt, grated coconut, and coriander leaves, and cook for 10 minutes. Turn off the heat and let it sit till the rice is ready.
    4. Now, little by little, add the masala to the cooked rice and toss till combined.

Tips

To minimise food waste store nuts/seeds out of direct light and heat and always in an airtight container.
