Method

    1. For the mini spirals: Add a clove of garlic, fresh spinach, macadamias, prunes, pine nuts and feta cheese to a blender. Blend into a chunky paste.
    2. Spread a sheet of puff pastry and cover with the spinach and nuts paste. Roll up and cut with a knife to obtain discs about two centimeters thick.
    3. Place the spirals on a baking tray covered with parchment paper. Brush with a little agave syrup and bake in a preheated oven at 200ºC for 20 minutes or until the puff pastry is golden brown.
    4. For the sauce: Mix the yogurt with the juice of half a lemon, salt, pepper, 3 tablespoons of extra virgin olive oil, grated cucumber, chopped chives and mint.
    5. Serve with the spirals.

Tips

Before adding the grated cucumber to the yogurt sauce, it is essential that you remove the water. To do this you can spread it on absorbent paper or drain it with a muslin.
