Nut Energy Bars

Method

    1. Remove the pits from the dates of both the granola and the bars and cut the granola dates into small pieces. For the bars, hydrate them with hot water for at least 10 minutes.
    2. For the granola: toast the oat flakes in a pan with the nuts and mix them with the chopped dates. Set aside.
    3. Heat the honey with the panela in the same pan until boiling, mixing everything from time to time with a wooden spoon. Meanwhile, strain and crush the dates that we had hydrated to obtain a date caramel.
    4. Once the honey and sugar have boiled, add the date caramel and pour this mixture over the granola. Stir everything well until it is compact and pour into a mold with parchment paper on the base and sides.
    5. Put parchment paper and a tray or some weight on top to flatten. Let cool completely and cut into bars.
    6. Optionally, spread the base with melted dark chocolate, cool again and serve.

Tips

Keep in the refrigerator once made, so that the texture is better preserved.
